Who wants some mouthwatering vegan French toast?
I used to avoid eating French toast growing up, since it had eggs as a binder. Later I consumed ones with refined sugar and milk. My sugars now however, are largely natural sugars. In some cases I use real stevia leaves. Milk has never suited me, even though I like it. So, I was a lacto-vegetarian for a very long time. BUT (for me) Milk bloated me, the high hormones gave me acne AND increased my body fat.

Going back to my French Toast which serves two:
Ingredients:
- 2 slices of wholewheat bread.
- 4 tablespoons of coconut milk (you can use any other nut milk or oats milk)
- 3 tablespoons of stevia leaves water to dilute it and sweeten the milk
- 1 teaspoon of coconut oil for cooking it all.
Process:
- Make four small pieces of the two slices of bread. Remove the edges.
- In a deep plate or dish add the coconut milk mix.
- Gently coat both the sides of the bread so that it absorbs the Milk. Ensure it doesn’t completely dissolve.
- Use 1 teaspoon of coconut oil, and brush it on the pan. Place the coated squares on the pan and let it cook until light golden brown.
Then eat. I garnish it with plain (nasty free and oil free) peanut butter drizzle and sliced banana. Healthy as it may be. It is still an indulgent meal. It is slightly calorific too. So one needs to be mindful.
