Who doesn’t like a warm Vietnamese Pho?

BESIDES VEGAN RAMEN I’ve come to love a good warming Vietnamese Pho. It is so simple to make has about 50 calories in it but makes you feel fuller for longer because of the fibre and is so flavorful.
Here’s a recipe if you want to try.
Ingredients:
- 1/2 cup glass noodles
- 1 cup of mixed veggies: such as pakchoy, bokchoy, different kinds of mushrooms (I’ve used, oyster, shimenji, button, shiitake and enokitake) which makes it full of protein as well; onions, tomatoes, garlic and ginger, bird eye chilli
- Herbs: Thai basil, lemon thyme, parsley, coriander, mint, kefir leaves
- Vegetable broth
Preparation:
- Soak the glass noodles for 15 minutes in cold water, till al dente.
- Add 1-2 cups of vegan broth to the bowl (I used star aninse, cinnamon. thai basil, thyme and lot of ginger and garlic in my broth to give that authentic flavor).
- Stir fry the veggies in little sesame oil.
- Add the veggies to the broth.
- Garnish with herbs and red chilli
