Lunch inspiration? Here’s a yummy minty quinoa and kale salad

Hello Folks!

This is my all time favorite salad. It’s so easy to make, it satiates you, it satisfies your tastebuds, it helps you get all the macros in, such as carbs (fiber), proteins, fats. It is so rich in those micronutrients which we ABSOLUTELY NEED (and veggies are a big source of them)! So what does this goodness have?

  • 1 cup of chopped Kale
  • 1 cup of cooked quinoa
  • 1/4 cup of roasted cashews
  • Fresh orange (sliced and cut)
  • Chilli flakes (a pinch)
  • Mint dressing of: 4 cloves of garlic, mint and coriander, rock salt, teaspoon of olive oil. (Blended in a blender with little water, with teaspoon of olive oil)

Place the chopped kale, quinoa, cashews, oranges on the plate. Add the mint dressing and toss it up. Then add the chilli flakes to it. It tastes yummmazzingggg!
