
Let’s make a WARM winter salad!

In Adelaide, where in the summer nip, I needed something wholesome, healing and quick, I chose this and now in London chill, I am missing my home cooked meals.
Simple ingredients, need 10 mins to prep and 10 to cook.
Ingredients:
- 20 grams of quinoa
- 1/4 cup chopped bell peppers (used red and yellow only)
- 1/4 cup of carrot
- 1/2 cup cherry tomatoes
- 1/4 of an red onion
- 1/2 orange
- Fresh thyme leaves (an ingredient, I am totally loving these days)
- Salt, chili and pinch of coriander powder to taste (you could eliminate the coriander powder to instead add fresh herbs, it tastes amazing)
- 2 cups of water
- 2 teaspoons olive oil
Method:
- Bring to boil, the quinoa with little salt.
- Boil for 10 minutes. Then drain the water.
- While the quinoa boils, in another pan add the olive oil and the red onion, peppers and carrot with two small sticks of thyme. Lightly sear the veggies. Don’t overcook.
- Add salt, chili and coriander powder to it.
- Once veggies are lightly seared, add the cherry tomatoes and sauté again.
- Once veggies are cooked mix with the quinoa. Add fresh thyme leaves, remove the stem and if you like parsley or coriander leaves as well.
- Add the chopped orange.
- Garnish it and EAT THE YUMMINESS.
Good for dinner or lunch!
