Pancakes? Anyone?

I think we all love pancakes, and the best part is, we all have some or the other version of pancakes in our different parts of the world. In india itself, we have so many versions of it. I relish each one. Alas, now can’t have most of them because of the way they are made. I’ve tried so many different vegan varieties, I could write a book just on pancakes. Well, here’s one made from banana flour. I found the flour in at Woolworths in Australia and decided to use it during my trip to Adelaide, SA. I love anything with banana so I had to make this.
Ingredients:
- 3 tablespoons of banana flour
- 1 tablespoon of coconut cream
- 5 tablespoons of water
- Honey or maple to sweeten
Method:
- Use a bowl and add the flour. Then add the ingredients.
- Mix well. Ensure there are no lumps.
- Bring a flat pan to heat.
- Add a small portion of the batter to the pan. Make a thick pancake.
- I haven’t used any oil but if you like add a teaspoon of olive oil or coconut oil.
- Flip the pancake and cook on both sides.
- Enjoy with bananas on top or any fruit of your choice.
It’s yummy and suits our health as well. Enjoy!
